Fig, Prosciutto, and Burrata Salad

Ingredients
- 1/4 C fig compote or jam
- 8 sl prosciutto
- 4 C arugula
- balsamic vinegar
- olive oil
- 8 oz burrata cheese, sliced
- 2 C fresh figs, quartered
Instructions
- Whisk together the fig compote with 1T water on low heat to warm.
- Whisk together the oil and vinegar, season to taste, then toss the arugula in the dressing.
- Plate the arugula, then garnish each plate with two slices of prosciutto, the figs and the cheese.
- Dress with the warm compote and serve.
